Impact of Different Drying Methods on the Acerola-Ceriguela Mixed Pulp: Physicochemical Characteristics, Bioactive Compounds, and Sensory Attributes

Fruit mixed pulp has the objective of improving nutritional and sensorial characteristics, as well development new flavours aromas. Different methods drying (e.g., spray-drying, spouted bed drying, freeze-drying) can influence quality final product. The this study was to select method that enables production acerola-ceriguela (ACMP) with higher quality. For selection, powder pulps were evaluated for their physicochemical characteristics (water activity, moisture, soluble solids (SS), titratable acidity (TA), SS/TA, instrumental colour), retention bioactive compounds (ascorbic acid, total carotenoids, phenolic compounds), sensory evaluation (acceptance, check-all-that-apply (CATA), intent purchase). freeze-dried spray-dried ACMP nonsignificant p > 0.05 but differed significantly id="M2"> from powder. freeze-drying resulted in ascorbic compounds. obtained by spray-drying showed compared drying. Therefore, suggests greater acceptance.
